Lumberjack Cake

  1. Preheat oven to 350u0b0F. Grease an 8 inch square cake pan and line with parchment paper.
  2. In a bowl, combine apples, dates and baking soda. Add 1 cup boiling water and stir to combine. Let cool.
  3. Meanwhile, cream butter and sugar until pale and fluffy. Add egg and vanilla. Mix flour and salt then stir into mixture alternately with apple mixture. Transfer to prepared pan and bake for 1 hour, or until a skewer inserted in the center comes out clean.
  4. To make the topping, combine brown sugar, butter, milk and coconut over low heat until butter melts. Spread over cake and bake for 15 mins, or until golden brown and crunchy. Let cool in pan.
