Oriental Seafood Salad
- 2 tablespoons sesame oil
- 1/2 onion small, peeled and finely chopped
- 1 inch fresh root ginger piece of, peeled and crushed
- 2/3 tablespoon soy sauce
- 2 tablespoons mayonnaise
- 1 salt and freshly ground pepper
- 7 15/16 ounces peeled prawns
- 7 15/16 ounces crab meat white, flaked
- 1 red pepper cored seeded and diced
- 4 inches cucumber piece of, diced
- 1 3/4 ounces beansprouts fresh
- 4 chinese leaves substitute lettuce leaves i
- 1 juice
- 1 lime
- slices of lime
- 8 tiger prawns unpeeled
- In a wok on the boiling platequickly heat the oil and add the onion and ginger.
- Fry until soft and then remove from the heat and transfer the contents to a large mixing bowl.
- Leave to cool.
- Once cooled stir in the soy sauce and mayonnaise.
- Add a little salt and pepper to taste but remember that soy sauce itself is fairly salty.
- Gently fold the prawns and the crab meat into the mayonnaise mixture.
- Then add the diced pepper cucumber and beansprouts.
- Line four serving dishes (preferably glass) with the shredded chinese leaves. Divide the mixture between the four dishes and stack the mixture in the centre.
- Squeeze a little lime juice over each serving and garnish each dish with two unpeeled tiger prawns and slices of lime.
