Asian Salad
- 3/4 head iceberg lettuce washed and chopped
- 1 cucumber medium, diced
- 1/3 cup cilantro minced
- 1 carrot julienned
- 2 tablespoons toasted peanuts
- 2 scallions white section sliced and green section minced
- 1 tablespoon olive oil
- 2 tablespoons orange juice
- 1 tablespoon white vinegar
- 1 teaspoon ginger grated
- 1 teaspoon soy sauce
- salt and ground black pepper
- Whisk together the olive oil, orange juice, vinegar, ginger, soy sauce, salt, and pepper. Set aside.
- Place the lettuce, cucumber, cilantro, carrot, and the white section of the scallions into a bowl and toss. Add the dressing and mix to coat the salad evenly.
- Place each half of the salad onto a serving dish and sprinkle with peanuts and the green section of the scallions.
