Zucchini With Cheese
- 1 1/2 lb. zucchini (about 4 c.)
- 1/4 c. flour
- 1 1/2 tsp. salt
- 1 1/2 tsp. oregano
- 1/4 tsp. pepper
- 1/4 c. salad oil
- 2 medium tomatoes, sliced
- 1 c. dairy sour cream
- 1/2 c. grated Parmesan cheese
- Preheat oven to 350u0b0.
- Lightly grease 8 x 8 x 2-inch baking dish.
- With stiff brush, scrub zucchini well.
- Cut crosswise into slices.
- In medium bowl, combine
- flour with 1/2 teaspoon salt, 1/2 teaspoon oregano and pepper.
- Toss zucchini slices in seasoned flour to coat them well.
- Slowly heat oil in large heavy skillet. Saute zucchini until golden brown on each side.
- Drain.
- Cover bottom of baking dish with zucchini.
- Top with tomato slices. Combine sour cream, rest of salt, oregano and pepper.
- Spread evenly over tomato slices.
- Then sprinkle with grated cheese. Bake 40 to 45 minutes until zucchini is tender.
