Mango Fritters

  1. Beat eggs well, then add sugar, milk, salad oil, lemon juice and ginger.
  2. Mix until blended.
  3. Add flour, baking powder and salt and stir until smooth.
  4. Refrigerate for 1 hour.
  5. Pour 2 inches of oil into a frying pan and heat over medium-high heat.
  6. Turn oven on to 250u0b0.
  7. Pat mangoes as dry as possible.
  8. Spear each piece with a fork and dip in batter, letting excess drain off into the bowl. Lower mango pieces into the hot oil.
  9. Don't crowd while frying. Fry until golden brown, approximately 2 minutes on each side. Drain on paper towels and keep warm in oven until all are done. Dust with confectioners sugar.
  10. Serve.
