Lisa'S Hawaiian Kabobs
- 1/2 c. reduced-sodium soy sauce
- 1/2 c. unsweetened pineapple juice
- 1/4 c. vegetable oil
- 1 Tbsp. brown sugar
- 1 tsp. garlic powder
- 2 tsp. ground ginger
- 1 tsp. dry mustard
- 1/4 tsp. freshly ground pepper
- 1 1/2 lb. chicken breasts, skinned and cut into cubes
- 3 c. hot cooked rice
- 1 (15 1/4 oz.) can unsweetened pineapple chunks, drained
- 1 large green pepper
- 1 large onion
- 18 cherry tomatoes or tomato wedges
- 12 medium size mushrooms (optional)
- Combine first 8 ingredients in saucepan; boil.
- Reduce heat and simmer 5 minutes.
- Let cool.
- Pour mixture into a shallow dish.
- Add chicken.
- Toss gently to coat.
- Cover and marinate at least 1 hour in refrigerator.
- Stir mixture occasionally.
