Hawaiian Roast
- 5 lb. chuck roast
- 3 Tbsp. oil
- 4 onions, quartered
- 1 c. diced celery
- 4 chopped carrots
- 12 oz. pineapple juice
- 1/4 tsp. ground ginger
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. sugar
- 3 Tbsp. soy sauce
- 1 (20 oz.) can pineapple chunks, drained
- 1/3 c. water
- 1/4 c. flour
- Brown
- roast in 12-inch Dutch oven in oil.
- Remove meat and brown vegetables.
- Return meat to Dutch oven.
- Add pineapple juice,
- ginger, salt, pepper, sugar and soy sauce.tover Dutch oven
- and
- simmer for 2 1/2 hours.tdd pineapple chunks and cook 20 minutes more.
- Transfer meat, vegetables and fruit to separate dish.
- Mix water with the flour and stir into the juice
- in
- the Dutch
- oven.
- Simmer until thickened, stirring constantly.tour sauce over meat and vegetables.
