Fish With Mandarin Sauce

  1. Coat fish with cornstarch.
  2. Heat skillet (325 degrees).
  3. Add oil, heat thoroughly.
  4. Fry fish on both sides until golden brown.
  5. Remove from pan.
  6. Quick fry scallion, garlic and ginger until golden brown, stirring constantly.
  7. Add mushrooms, quick fry for 1 minute.
  8. Add sauce and chicken stock.
  9. Bring to a boil.
  10. Add fish.
  11. Lower heat.
  12. Simmer about 15 minutes, covered.
  13. Serve with rice.
  14. Serves 4 to 6.
