Sicilian Rice Balls
- 1 tablespoon vegetable oil
- 1 onion peeled and diced
- 7 ounces ground meat
- 3 tablespoons tomato puree
- 3/4 cup rice
- chicken broth
- salt
- ground black pepper
- mozzarella cheese cubed
- 1 egg beaten
- breadcrumbs
- Add the oil to a large skillet on medium heat. Add the onion and saute for 5 minutes. Once golden brown, add the ground meat and cook for 5 minutes.
- Add the tomato and rice and stir. Cook for 5 minutes,.
- After a few minutes, add the broth and season with salt and pepper. Cook until the rice is done.
- Add the mixture to a baking sheet to cool.
- Place a layer of the rice mixture on your palm and place a cube of cheese in the middle.
- Add some rice on top and close the rice ball.
- Cover each rice ball with the egg and breadcrumbs.
- Fry in plenty of oil and serve warm.
