Sicilian Rice Balls

  1. Add the oil to a large skillet on medium heat. Add the onion and saute for 5 minutes. Once golden brown, add the ground meat and cook for 5 minutes.
  2. Add the tomato and rice and stir. Cook for 5 minutes,.
  3. After a few minutes, add the broth and season with salt and pepper. Cook until the rice is done.
  4. Add the mixture to a baking sheet to cool.
  5. Place a layer of the rice mixture on your palm and place a cube of cheese in the middle.
  6. Add some rice on top and close the rice ball.
  7. Cover each rice ball with the egg and breadcrumbs.
  8. Fry in plenty of oil and serve warm.
