Sauteed Fava Beans

  1. Boil the fava beans and peas in salted water and set aside.
  2. In an already hot wok, add the oil, garlic, ginger and saute until golden.
  3. Add the peppers and saute for another 2 minutes.
  4. Add the olives and saute about 3 minutes, stirring constantly.
  5. Add the fava beans and peas, and cook for another 5 minutes. If the mixture is too dry, add a little olive oil, but not too much so it doesn't get sticky.
  6. A minute before removing from heat, add the coriander and roasted peanuts.
  7. Remove from heat, and serve with another drizzle of olive oil and 1 tablespoon of rice vinegar.
