Sauteed Fava Beans
- 1 1/3 pounds fava beans frozen
- 1 1/2 cups frozen peas
- 2 garlic cloves
- 1/2 teaspoon ginger
- 2 teaspoons green peppers chopped
- 3 teaspoons fresh coriander chopped
- salt to taste
- olive oil
- rice vinegar
- 1 cup pitted green olives
- 4 teaspoons toasted peanuts
- Boil the fava beans and peas in salted water and set aside.
- In an already hot wok, add the oil, garlic, ginger and saute until golden.
- Add the peppers and saute for another 2 minutes.
- Add the olives and saute about 3 minutes, stirring constantly.
- Add the fava beans and peas, and cook for another 5 minutes. If the mixture is too dry, add a little olive oil, but not too much so it doesn't get sticky.
- A minute before removing from heat, add the coriander and roasted peanuts.
- Remove from heat, and serve with another drizzle of olive oil and 1 tablespoon of rice vinegar.
