Garlic Shrimp Caesar Salad
- medium shrimp 1 pound, s, shelled, deveined
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 3 cloves garlic pressed
- 2 teaspoons dijon mustard
- 1 teaspoon paprika
- 1 head romaine lettuce thinly sliced
- 1 head radicchio thinly sliced
- 1/4 cup plain nonfat Greek yogurt
- 3 tablespoons fresh lemon juice
- Parmesan cheese grated
- 1 clove garlic pressed
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup croutons unseasoned
- In large bowl, toss shrimp, olive oil, 1 tablespoon fresh lemon juice, 3 pressed garlic cloves, Dijon mustard, and hot paprika. Refrigerate 10 minutes.
- Meanwhile, thinly slice romaine lettuce and radicchio and transfer to large serving bowl. In small bowl, whisk yogurt, 3 tablespoons fresh lemon juice, Parmesan cheese, 1 pressed garlic clove, and 1/4 teaspoon each salt and pepper; toss with lettuce mixture in bowl. Spread shrimp on foil-lined cookie sheet and roast at 400 degrees F for 10 minutes or until pink; add to salad along with croutons.
