Grilled Fish With Mango Coulis

  1. To prepare coulis: Combine mango, milk, water, ginger juice, salt and pepper in a blender. Blend until smooth and pour into a small saucepan. Bring the mixture to a simmer over medium-high heat, about 6 minutes. Remove from heat and whisk in the butter until smooth and shiny. Set aside until ready to use.
  2. To prepare fish: Heat up grill and brush with oil. Season the fish with salt and pepper. Grill fish 4-5 minutes each side.
  3. Serve fish hot from the grill with rice and mango coulis.
