Grilled Fish With Mango Coulis
- 7/8 tablespoon vegetable oil
- 6 1/3 ounces red snapper fillet
- 1/3 teaspoon salt
- 5/8 teaspoon black pepper
- mango coulis
- 3 5/8 tablespoons mango Anmum Vanilla
- 1 teaspoon water
- 1/8 ounce ginger juice
- 1/8 teaspoon salt
- 5/8 teaspoon black pepper
- 4 7/8 tablespoons alfalfa sprouts
- 9/16 tablespoon tomatoes cubed
- 1 tablespoon mango cubed
- To prepare coulis: Combine mango, milk, water, ginger juice, salt and pepper in a blender. Blend until smooth and pour into a small saucepan. Bring the mixture to a simmer over medium-high heat, about 6 minutes. Remove from heat and whisk in the butter until smooth and shiny. Set aside until ready to use.
- To prepare fish: Heat up grill and brush with oil. Season the fish with salt and pepper. Grill fish 4-5 minutes each side.
- Serve fish hot from the grill with rice and mango coulis.
