Banana Coconut Loaf

  1. Break eggs in a mixing bowl.
  2. Beat until light and frothy.
  3. Add sugar and melted butter.
  4. Beat well.
  5. Stir in mashed banana and flavoring.
  6. In another bowl, measure in remaining ingredients. Stir until well mixed.
  7. Pour over batter.
  8. Stir just to combine. Spoon into greased loaf pan, 9 x 5 x 3-inch.
  9. Bake for 1 hour in a 350u0b0 oven until toothpick inserted in center comes out clean.
  10. Let stand for 10 minutes.
  11. Remove from pan.
  12. Cool and wrap.
