Banana Coconut Loaf
- 2 eggs
- 1 c. granulated sugar
- 1/2 c. butter or margarine, melted
- 1 c. mashed ripe bananas (3 medium)
- 1/2 tsp. almond flavoring
- 1 1/2 c. all-purpose flour
- 1/2 c. medium grated coconut
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. chopped walnuts
- 1/2 c. maraschino cherries, cut up
- Break eggs in a mixing bowl.
- Beat until light and frothy.
- Add sugar and melted butter.
- Beat well.
- Stir in mashed banana and flavoring.
- In another bowl, measure in remaining ingredients. Stir until well mixed.
- Pour over batter.
- Stir just to combine. Spoon into greased loaf pan, 9 x 5 x 3-inch.
- Bake for 1 hour in a 350u0b0 oven until toothpick inserted in center comes out clean.
- Let stand for 10 minutes.
- Remove from pan.
- Cool and wrap.
