Beef Roulades
- 4 flank steaks large thin
- 2 potatoes sliced
- 2 carrots sliced
- 4 strips bacon
- 1/2 onion sliced
- 1/2 onion diced
- 1 tablespoon mustard
- 4 tomatoes
- 1 clove garlic
- 1 cup chicken broth
- salt and pepper
- Spread out each flank steak and spread with mustard. Place a strip of bacon and slices of potato, carrot and onion down the center of each steak lengthwise. Sprinkle with salt and pepper.
- Roll up each steak and secure with two toothpicks. Cut each roll in half.
- Fry the rolls in a little oil in a pan until the meat is cooked on the outside, approximately 2 minutes on each side. Lower the heat.
- Blend the tomatoes, broth, diced onion, garlic, salt and pepper in the blender. Add to the pan and cook 20 minutes until the flavors blend.
