Grilled Shrimp With Chili Dressing

  1. To make the chili dressing, combine the chilis, lime juice, fish sauce, and sugar in a small bowl. Stir until the sugar dissolves. Set aside.
  2. Cut down the center back of the shrimp without cutting right through and flatten out to form a butterfly shape. Place on a baking sheet and brush with oil. Season.
  3. Heat a broiler, grill pan, or outdoor grill to high. Cook the shrimp for 2-3 mins, turning halfway through the cooking time and brushing with the dressing, until lightly charred and pink. Set aside to rest for 2 mins, keeping warm.
  4. Drizzle with the remaining chili dressing, sprinkle with cilantro, and serve with lime wedges and steamed rice.
