Grilled Shrimp With Chili Dressing
- 1 red chili long, seeded, very finely chopped
- 1 green chili long, seeded, very finely chopped
- 1 lime juiced
- 2 teaspoons fish sauce
- 1 teaspoon sugar
- 3 1/3 pounds tiger shrimp peeled, deveined, tails intact
- 2 teaspoons neutral oil
- cilantro sprigs to serve
- lime wedges to serve
- steamed rice to serve
- To make the chili dressing, combine the chilis, lime juice, fish sauce, and sugar in a small bowl. Stir until the sugar dissolves. Set aside.
- Cut down the center back of the shrimp without cutting right through and flatten out to form a butterfly shape. Place on a baking sheet and brush with oil. Season.
- Heat a broiler, grill pan, or outdoor grill to high. Cook the shrimp for 2-3 mins, turning halfway through the cooking time and brushing with the dressing, until lightly charred and pink. Set aside to rest for 2 mins, keeping warm.
- Drizzle with the remaining chili dressing, sprinkle with cilantro, and serve with lime wedges and steamed rice.
