Spicy Lamb Flatbreads With Yogurt
- 1 pound ground lamb lean
- 3 teaspoons spice mix Middle-Eastern
- 4 green onions finely chopped
- 1 clove garlic peeled and crushed
- 1/4 cup lemon juice
- 1/2 pound plum tomatoes small, halved
- 4 loaves small ciabatta, cut in half lengthwise
- 1 cup low fat plain yogurt
- 1/2 ounce cilantro chopped, plus extra to garnish
- lemon wedges to serve
- Heat a large frying pan over medium heat. Cook the lamb, stirring to break up the lumps, 3-4 mins or until color changes. Stir in the spice mix, onion, garlic, lemon juice and tomato and cook, stirring, 2 mins or until the lamb is cooked.
- Preheat oven broiler to high. Broil the bread, cut-side up, 2 mins or until golden. Transfer to a cutting board. Top with the lamb mixture. Combine the yogurt and chopped cilantro and spoon onto the lamb mixture. Sprinkle with extra cilantro and serve with lemon wedges.
