Greek Style Meatballs
- 1 pound ground beef
- 3/4 cup feta cheese crumbled
- 1/2 red onion small, grated
- 1/3 cup italian style bread crumbs
- 1/4 cup fresh parsley chopped
- 1 large egg lightly beaten
- 2 teaspoons dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 teaspoons oil
- 1/2 cup tzatziki prepared
- olive oil cooking spray
- lemon slices for garnishing
- 1 pound red potatoes
- parsley for garnish
- In large bowl, mix ground beef, crumbled feta cheese, red onion, bread crumbs, chopped fresh parsley, egg, dried oregano, and 1/4 teaspoon each salt and pepper. Form into 12 balls and thread onto skewers.
- On cookie sheet sprayed with olive oil cooking spray, roast meatballs at 425 degrees F for 15 to 20 minutes, or until cooked through. Serve with lemon slices, prepared tzatziki, and red potatoes, roasted with 2 teaspoons oil. Garnish with additional parsley.
