Greek Style Meatballs

  1. In large bowl, mix ground beef, crumbled feta cheese, red onion, bread crumbs, chopped fresh parsley, egg, dried oregano, and 1/4 teaspoon each salt and pepper. Form into 12 balls and thread onto skewers.
  2. On cookie sheet sprayed with olive oil cooking spray, roast meatballs at 425 degrees F for 15 to 20 minutes, or until cooked through. Serve with lemon slices, prepared tzatziki, and red potatoes, roasted with 2 teaspoons oil. Garnish with additional parsley.
