Stuffed Mushrooms
- 1 1/2 pounds white mushrooms large, about 1 1/2 lbs
- 2 tablespoons promise buttery spread
- 1 1/2 cups zucchini finely chopped
- 1 cup red bell pepper
- 1/2 cup onions
- 8 ounces lump crab meat
- 2 tablespoons fat-free cheddar cheese
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 3/4 teaspoon ground cumin
- Preheat oven to 375u0b0. Remove and finely chop mushroom stems; reserve 1 cup.
- Melt Promise(R) Buttery Spread in 12-inch nonstick skillet, over medium heat and cook zucchini, red pepper, onion and reserved mushroom stems, stirring occasionally, 5 minutes or until tender. Add ground turkey and cumin and cook, stirring occasionally, until browned, about 5 minutes. Stir in salt and black pepper; set aside.
- Arrange mushroom caps on baking sheet; evenly stuff with turkey mixture. Bake 25 minutes or until mushrooms are tender. Sprinkle with cheese.
