Beef Barley Soup
- 1 lb. ground beef
- 1/2 c. chopped green pepper
- 1/2 c. chopped celery
- 1/4 c. celery greens
- 3 1/2 to 4 c. water
- 1 can tomato soup
- 1 (8 oz.) can tomato sauce
- 1/2 c. green beans
- 2 to 3 tsp. sugar (optional)
- salt and pepper
- 1 tsp. garlic powder
- 1 tsp. soy sauce
- 1 bay leaf
- 1/4 tsp. paprika
- 1/4 tsp. thyme
- 1/4 c. barley
- 1 c. chopped potatoes
- 3/4 c. chopped carrots
- cabbage and broccoli (optional)
- Brown and drain ground beef.
- Add remaining ingredients except carrots and potatoes; simmer 1 hour.
- Add remaining vegetables and simmer another 20 minutes.
- (A quart of whole tomatoes can be substituted for tomato soup and sauce.)
