Speculoos Cheesecake

  1. Preheat oven to 300 degrees Fahrenheit.
  2. Grind the speculoos in a bowl.
  3. Melt butter in a bowl in the microwave oven.
  4. Pour butter on the ground speculoos powder, knead by hand.
  5. On the base of a springform pan, roll out the dough with a glass.
  6. Use a spatula to spread 3 tablespoons of speculoos spread on top of dough..
  7. Refrigerate.
  8. In another bowl, mix cream cheese, brown sugar, and 1 teaspoon of vanilla sugar.
  9. Add the vanilla extract and mix.
  10. Finally, add eggs, and mix until the mixture is smooth.
  11. Remove the speculoos pan from the refrigerator: Pour cheese mixture in pan, even out with a spatula.
  12. Sprinkle 1 teaspoon of vanilla sugar on the cheesecake.
  13. Bake for 1 hour.
  14. Once cooked, the cake should quiver slightly (after cooling it will harden).
  15. Remove cheesecake from pan and cool for at least 4 hours.
  16. To serve, melt 3 tablespoons of speculoos spread to pipe a grid on the cheesecake using a pastry bag,
