Speculoos Cheesecake
- 7 tablespoons butter
- 2 cups cookies speculoos
- 3 tablespoons speculoos spread
- 2 9/16 cups creamcheese
- 7 1/4 tablespoons dark brown sugar
- 2 teaspoons vanilla sugar
- 2 teaspoons vanilla extract
- 4 eggs
- 3 tablespoons speculoos spread
- 1 tablespoon speculoos
- Preheat oven to 300 degrees Fahrenheit.
- Grind the speculoos in a bowl.
- Melt butter in a bowl in the microwave oven.
- Pour butter on the ground speculoos powder, knead by hand.
- On the base of a springform pan, roll out the dough with a glass.
- Use a spatula to spread 3 tablespoons of speculoos spread on top of dough..
- Refrigerate.
- In another bowl, mix cream cheese, brown sugar, and 1 teaspoon of vanilla sugar.
- Add the vanilla extract and mix.
- Finally, add eggs, and mix until the mixture is smooth.
- Remove the speculoos pan from the refrigerator: Pour cheese mixture in pan, even out with a spatula.
- Sprinkle 1 teaspoon of vanilla sugar on the cheesecake.
- Bake for 1 hour.
- Once cooked, the cake should quiver slightly (after cooling it will harden).
- Remove cheesecake from pan and cool for at least 4 hours.
- To serve, melt 3 tablespoons of speculoos spread to pipe a grid on the cheesecake using a pastry bag,
