Baked Ravioli With Ham And Rich Tomato Sauce
- 2 tablespoons sunflower oil
- 1 1/8 pounds gammon steak sliced
- 1 onion diced
- 1 garlic clove crushed
- 2 cans chopped tomatoes 400g each
- 1 1/3 pounds cheese ravioli fresh
- 1 yellow pepper deseeded and diced
- 1 pinch caster sugar
- 1 tablespoon orange liqueur
- 4 cups rocket
- 2/3 cup cheddar grated
- Heat 1 tbsp oil in a large nonstick skillet over medium-high heat. Add the ham and cook for 4-5 mins until browned, stirring often. Remove and set aside.
- Preheat the oven to 400u0b0F. Heat the remaining 1 tbsp oil in a large saucepan over medium heat. Add the onion and garlic and cook for 5 mins. Add the tomatoes and bring to a boil. Reduce heat, cover and simmer for 8-10 mins until flavors have blended.
- Meanwhile, cook the ravioli according to the package directions, then drain. Mix the bell pepper, liqueur and sugar into the tomato sauce and boil for 1 min. Mix the ravioli, arugula and ham into the sauce, then transfer to a large baking dish. Sprinkle with the cheese and bake for 15-20 mins until hot and bubbly.
