Baked Ravioli With Ham And Rich Tomato Sauce

  1. Heat 1 tbsp oil in a large nonstick skillet over medium-high heat. Add the ham and cook for 4-5 mins until browned, stirring often. Remove and set aside.
  2. Preheat the oven to 400u0b0F. Heat the remaining 1 tbsp oil in a large saucepan over medium heat. Add the onion and garlic and cook for 5 mins. Add the tomatoes and bring to a boil. Reduce heat, cover and simmer for 8-10 mins until flavors have blended.
  3. Meanwhile, cook the ravioli according to the package directions, then drain. Mix the bell pepper, liqueur and sugar into the tomato sauce and boil for 1 min. Mix the ravioli, arugula and ham into the sauce, then transfer to a large baking dish. Sprinkle with the cheese and bake for 15-20 mins until hot and bubbly.
