Lemon Lady Biscuits (Gluten & Dairy Free)

  1. Cream the Margarine and sugar together until creamy and then mix in the zest and juice.
  2. Add the remaining ingredients and mix until a dough forms This should not be too firm and not at all tacky. You should be able to roll it without it being sticky.
  3. Roll the dough to about 1/2cm thick onto a lightly floured surface (or in between to sheets of baking paper), cut shapes and place onto a lined tray. I use a biscuit press for making shapes in this step.
  4. Bake at 160* in a fan forced oven for 25 minutes. Make sure to swap the trays during the cooking process so that they cook evenly. Let cool on the trays.
