Oat Pancakes With Jam And Yogurt
- 1/2 cup oat flour
- 2 tablespoons flour flaxseed, approx 20g
- 1 tablespoon chia seeds
- 250 milliliters milk your choice, cow's, almond, I used oat milk
- 1 pinch salt
- greek yogurt Full-fat
- jam
- blueberries
- To make your own flour add 1 cup of oats to a blender, blend on high speed shaking the blender every few seconds to stir the oats. Blend until you reach desired flour like consistency. Follow the same process with 1/2 cup of flaxseed. Store in airtight container for up to 4-6 weeks.
- If you just want to make enough flour for one batch of pancakes add 1/2 cup of oats and 2 tablespoons of flaxseed together to the blender. Blend on high speed shaking the blender every few seconds to stir the oats. Blend until you reach desired flour like consistency. This will make a bit more flour than needed to make this batter. Just add a bit more milk to the batter to compensate.
- If batter is on the thick side just add a bit of milk and stir well.
- Store any leftover pancakes in the fridge. They are delicious toasted/ microwaved next day.
- Makes 8-9 pancakes.
