Bacon And Mushroom Quiche

  1. Preheat oven to 400u0b0F. Grease a 9 inch springform pie pan.
  2. Roll out pastry until large enough to fit pan. Fit to pan, trimming edges. Chill for 10 mins.
  3. Line pan with parchment paper and fill with pie weights. Bake for 10 mins. Remove paper and weights. Bake for another 5 mins. Cool. Reduce oven to 350u0b0F.
  4. In a large bowl, combine eggs, cheese, cream and Dijon. Season to taste.
  5. Sprinkle mushrooms, bacon, tomato and onions evenly over crust. Pour egg mixture over top. Sprinkle with paprika. Bake for 35-40 mins, until golden and set. Serve in wedges topped with arugula.
