Bacon And Mushroom Quiche
- 1 sheet frozen pie crust thawed
- 4 large eggs
- 4 1/4 ounces cheddar grated
- 1/2 cup cream
- 1/2 teaspoon dijon mustard
- 3 1/2 ounces button mushrooms thinly sliced
- 3 strips bacon chopped
- 1 tomato finely chopped
- 3 scallions finely chopped
- 1/2 teaspoon paprika
- arugula to serve
- Preheat oven to 400u0b0F. Grease a 9 inch springform pie pan.
- Roll out pastry until large enough to fit pan. Fit to pan, trimming edges. Chill for 10 mins.
- Line pan with parchment paper and fill with pie weights. Bake for 10 mins. Remove paper and weights. Bake for another 5 mins. Cool. Reduce oven to 350u0b0F.
- In a large bowl, combine eggs, cheese, cream and Dijon. Season to taste.
- Sprinkle mushrooms, bacon, tomato and onions evenly over crust. Pour egg mixture over top. Sprinkle with paprika. Bake for 35-40 mins, until golden and set. Serve in wedges topped with arugula.
