Southwest Sausage Skillet
- 4 smoked sausage pack, I used a Jalapeno blend
- 1 pound red potatoes
- 1/2 green bell pepper
- 1/2 orange bell pepper
- 1/4 yellow onion
- 2 tablespoons chives chopped
- 2 tablespoons extra-virgin olive oil
- 1 salt pepper, garlic powder to taste
- 1 tablespoon red chili powder
- Cut potatoes in half then quarters.
- In a food safe plastic bag add potatoes, 1 Tbsp olive oil, and red chili powder. Shake bag well until potatoes are evenly covered.
- Preheat oven to 375u0b0 F
- In a heated saute pan, add potatoes and saute on medium high until potatoes become crisp.
- Place potatoes in a shallow aluminum foil lined baking sheet and bake for about 15 minutes or until potatoes are softened to your liking.
- Meanwhile arange sliced sausage in the saute pan with remaining oil and fry until golden, flip and repeat.
- Add peppers, onion, and salt & pepper. Saute until onion is translucent.
- Return potatoes to pan and toss with chives and garlic powder for about a minute.
- Enjoy as an easy dinner, and leftovers are great in the morning topped with eggs and cheese.
