Sugar-Free Gingerbread Men
- 3 cups whole grain wheat flour
- 1/4 teaspoon salt
- 3/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 cup bran
- 3 teaspoons ground ginger or to taste
- 1 teaspoon allspice
- 1 teaspoon ground cinnamon
- 1 cup butter
- 6 tablespoons sugar substitute
- 2 eggs beaten
- 3 tablespoons orange juice
- 1 teaspoon butter to grease
- 2/3 cup unsulphured molasses
- Heat oven to 350 F. In a large bowl mix flour, salt, baking powder and baking soda, bran and spices together.
- In the bowl of a standing mixer with the paddle attachment, beat the butter, eggs, sugar substitute, orange juice and molasses until well combined. Slowly add the flour mixture until incorporated.
- Remove dough from bowl and roll out thinly on floured board.
- Using a cutter, cut into gingerbread men shapes (or other shapes) and place on buttered cookie sheets.
- Bake for 15-20 min or until crisp and lightly browned. Cool on a wire tray and store in an airtight container.
