Island Dreams
- 2 2/3 c. flaked coconut (7 oz.)
- 1 c. slivered almonds
- 1/2 c. butter or margarine
- 3/4 c. granulated sugar
- 1/2 c. light brown sugar
- 1 tsp. vanilla extract
- 1 tsp. coconut extract
- 1 egg
- 1 2/3 c. all-purpose flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 c. cornstarch
- Toast coconut and almonds on cookie sheet at 350u0b0 for 4 to 6 minutes.
- Watch carefully; stir occasionally.
- Cream butter and white and brown sugars until light.
- Add vanilla and coconut extracts.
- Beat in egg.
- Combine flour, baking soda, salt and cornstarch.
- Stir into butter mixture using a spoon rather than a mixer.
- Add coconut and almonds.
- Shape into 1-inch balls.
- Place on lightly greased cookie sheets.
- Bake at 350u0b0 for 10 to 12 minutes.
- Cool slightly before removing to a rack to complete cooling.
