Breast-Of-Chicken Fiesta
- 1 c. Cheddar cheese cracker crumbs
- 2 Tbsp. taco seasoning mix
- 8 chicken breast halves, boned and skinned
- 4 green onions, chopped (I use lots)
- 2 Tbsp. oleo (I don't use)
- 2 c. whipping cream (I use evaporated skimmed milk; 1 large can)
- 1 c. (4 oz.) shredded Monterey Jack cheese
- 1 c. (4 oz.) shredded Cheddar cheese
- 1 (4 oz.) can chopped green chiles, drained
- 1/2 tsp. chicken flavored bouillon granules
- Combine cracker crumbs and seasoning mix; stir well.
- Dredge chicken in mixture and place in greased 13 x 9 x 2-inch dish. Saute onions in oleo, stir in whipping cream and remaining ingredients and pour over chicken.
- Bake, uncovered, at 350u0b0 for 45 minutes.
- Makes 8 servings.
