Blueberry And Cardamom Pie

  1. Place the butter flour and half the sugar in a food processor.
  2. Snip open the cardamom pods and crush the seeds: you need 1 heaped tsp. Add to the bowl with one of the eggs.
  3. Proceed briefly until blended.
  4. Spoon into a buttered 18cm square cake tin spreading slightly up the sides.
  5. Sprinkle the berries over the base.
  6. Beat together the sour cream and vanilla with the remaining egg and sugar then pour over the berries.
  7. Bake in a preheated oven (200C/400F/Gas Mark 6) for about 25 minutes or until the edges are golden brown and the filling just set Cool for at least 40 minutes then cut into squares and serve warm with plenty of coffee.
