No Fat Chocolate Cake
- 1 c. evaporated skim milk
- 3/4 c. cocoa
- 1 c. sweetened applesauce
- 1 tsp. vanilla
- 2 c. flour
- 1 1/2 c. sugar
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 4 large egg whites (at room temperature)
- Preheat oven to 350u0b0.
- Prepare pans.
- Heat milk until barely simmering.
- Remove from heat and whisk in cocoa until thickened and almost smooth.
- Let stand 2 to 3 minutes to cool.
- Whisk in applesauce and vanilla.
- Mix flour, 1 1/4 cups sugar, baking powder, baking soda and salt in large bowl.
- Beat egg whites in medium bowl until thick and foamy.
- Gradually beat in remaining 1/4 cup sugar until stiff peaks form.
- Pour cocoa mixture over flour mixture.
- Stir just until blended.
- Gently stir about 1/4 egg whites into flour.
- Fold in remaining whites until no streaks remain.
- Pour into pan.
- Bake 20 to 30 minutes.
- Cool on wire rack about 10 minutes before removing from pans.
