No Fat Chocolate Cake

  1. Preheat oven to 350u0b0.
  2. Prepare pans.
  3. Heat milk until barely simmering.
  4. Remove from heat and whisk in cocoa until thickened and almost smooth.
  5. Let stand 2 to 3 minutes to cool.
  6. Whisk in applesauce and vanilla.
  7. Mix flour, 1 1/4 cups sugar, baking powder, baking soda and salt in large bowl.
  8. Beat egg whites in medium bowl until thick and foamy.
  9. Gradually beat in remaining 1/4 cup sugar until stiff peaks form.
  10. Pour cocoa mixture over flour mixture.
  11. Stir just until blended.
  12. Gently stir about 1/4 egg whites into flour.
  13. Fold in remaining whites until no streaks remain.
  14. Pour into pan.
  15. Bake 20 to 30 minutes.
  16. Cool on wire rack about 10 minutes before removing from pans.
