Nutty Potato Chip Cookies
- 1 stick butter
- 1/4 cup sugar
- 1/2 teaspoon vanilla
- 1 cup flour
- 1/4 cup potato chips crushed
- 1 tablespoon nuts chopped, optional
- 1 tablespoon chocolate chips optional
- Bring butter to room temperature (about 45 minutes to an hour). Using a wooden spoon, cream butter and sugar together. Scrape down the sides of bowl with rubber spatula. Stand mixer can be used.
- Add in vanilla and flour.
- Mix in potato chips and, if using, nuts and chocolate chips.
- Preheat oven to 350 degrees.
- Dough can be rolled out and cut with cookie cutters or dropped by teaspoons onto an ungreased cookie sheet.
- Bake for 13-15 minutes.
- Let cool. Cookies can be dipped in melted chocolate for an added treat.
- Note: Dough can be colored with food coloring before baking for holidays.
