Paleo Vanilla Chocolate Pudding Pie
- 1 3/4 cups almond flour
- 1/4 cup arrowroot starch
- 1/2 teaspoon sea salt
- 2 tablespoons honey
- 2 tablespoons coconut milk
- 4 avocados
- 1/2 cup almond butter
- 1/2 cup coconut sugar
- 3 teaspoons vanilla
- 1/3 cup shortening palm
- 1 cup cashews soaked overnight
- 2 bananas
- 1/4 cup coconut oil melted
- coconut cream whipped, or chocolate shavings for garnish
- 1/3 cup cocoa powder
- In a mixing bowl, combine almond flour, arrowroot starch, sea salt, honey, coconut milk and 1/3 cup palm shortening and blend until just combined and crumbly.
- Press into a 9"pie plate and pierce a few times with a fork. Bake at 350F for about 8-10 minutes or until just slightly browned.
- In a small sauce pan, combine avocados, cocoa powder, almond butter, coconut sugar, vanilla and 2 Tbsp palm shortening over low heat. Stir until smooth and cook for just about 5 minutes to warm pudding. Remove from heat.
- In a blender, combine cashews, bananas, vanilla and coconut oil and puree until completely smooth (about 2 minutes).
- Pour cooled chocolate filling over crust and spread flat. Top with cashew vanilla filling and spread flat. Let pie chill for at least 4 hours or overnight to completely set.
- Top with whipped coconut cream or chocolate shavings if desired.
