Paleo Vanilla Chocolate Pudding Pie

  1. In a mixing bowl, combine almond flour, arrowroot starch, sea salt, honey, coconut milk and 1/3 cup palm shortening and blend until just combined and crumbly.
  2. Press into a 9"pie plate and pierce a few times with a fork. Bake at 350F for about 8-10 minutes or until just slightly browned.
  3. In a small sauce pan, combine avocados, cocoa powder, almond butter, coconut sugar, vanilla and 2 Tbsp palm shortening over low heat. Stir until smooth and cook for just about 5 minutes to warm pudding. Remove from heat.
  4. In a blender, combine cashews, bananas, vanilla and coconut oil and puree until completely smooth (about 2 minutes).
  5. Pour cooled chocolate filling over crust and spread flat. Top with cashew vanilla filling and spread flat. Let pie chill for at least 4 hours or overnight to completely set.
  6. Top with whipped coconut cream or chocolate shavings if desired.
