Chicken Skewers With Tomato Salad
- 1 1/4 pounds chicken thigh trimmed, cut into 1 inch pieces
- 1 teaspoon lemon zest
- 2 cloves garlic minced
- 8 small potatoes quartered
- 1 head romaine lettuce leaves baby, torn
- 2 tomatoes large, coarsely chopped
- 1 persian cucumber small, coarsely chopped
- 1/2 red onion medium, thinly sliced
- 2 tablespoons fresh mint leaves shredded
- 3 teaspoons vegetable oil
- 2 teaspoons lemon juice
- lemon wedges to serve
- Combine chicken, lemon zest and garlic. Cover with plastic wrap and chill for 15 mins to marinate.
- Preheat grill. Thread chicken onto 8 skewers. Grill for 10-12 mins, or until golden brown and cooked through. Set aside, cover with foil and let rest for 5 mins.
- Meanwhile, cook potatoes in boiling salted water for 10 mins, or until tender. Drain then rinse under cold water until cool. Toss with lettuce, tomatoes, cucumber, onion and mint. Drizzle with oil and lemon juice and toss to combine. Season.
- Distribute salad between serving plates. Top with skewers. Serve immediately with lemon wedges.
