Salmon Salad In Ciabatta Bowl
- 1 1/8 pounds ciabatta fresh
- 3 1/2 tablespoons butter
- 5 tablespoons olive oil
- 2/3 pound salmon fillet diced
- 3 tablespoons balsamic vinegar light
- 1 onion small, finely diced
- 5 7/8 cups peppers mixed, diced
- 2 3/8 cups cucumber diced
- 1 1/4 cups radish diced
- 1 romaine lettuce mini, sliced
- 9/16 cup mayonnaise
- 5 1/3 tablespoons tomato ketchup
- 2 tablespoons milk
- 1 tablespoon worcestershire sauce
- 1/2 teaspoon caster sugar
- Heat butter in a wide saucepan, add diced bread and toast for 3-4 mins, turning. Remove from pan and set aside to cool. Add 2 tbsp oil to the frying pan, add salmon and saute for 4-5 mins, turning. Remove from pan and set aside to cool slightly.
- Meanwhile, mix vinegar, onion and remaining oil together and season. Toss with peppers, cucumber, radish, lettuce and salmon then distribute between ciabatta.
- To finish, mix mayonnaise, ketchup, milk, Worcestershire sauce and sugar together and season. Drizzle over sandwiches and sprinkle with croutons. Serve.
