Noodles With Herb Sauce
- 1 3/16 cups noodles wide ribbon
- 2 garlic peeled
- 2 3/8 tablespoons pine nuts chopped
- 3 tablespoons basil chopped
- 1 tablespoon marjoram chopped
- 1 tablespoon olive oil
- 1 tablespoon warm water
- salt
- 6 1/2 tablespoons ricotta cheese
- 2 tablespoons single cream
- 1 3/4 tablespoons butter
- Cook the noodles in plenty of boiling salted water for about 10 minutes until tender.
- Meanwhile put the garlic and pine nuts into a mortar and crush them.
- Transfer them to a bowl and mix with the basil and marjoram.
- Stir in the oil and water and season with salt.
- Mash the cheese with a fork add to the herb mixture with the cream.
- Stir until smooth.
- Drain the noodles return them to the pan and toss in the butter.
- Place on a hot dish and serve with the herb sauce poured over.
