Lemon Chicken With Rice
- 4 chicken breasts
- salt
- black pepper
- 1 cup rice
- 1 cup chicken broth
- 1 tablespoon lemon juice
- peas optional
- 1 tablespoon butter
- 2 tablespoons flour
- 1 cup chicken broth
- 1 cup milk or half-and-half
- 1/4 teaspoon nutmeg
- 1 pinch cayenne pepper
- 1 tablespoon fresh lemon juice
- salt optional
- Season the chicken with the salt and pepper. Saute over medium heat until cooked through (or, gently poach until cooked).
- 1. Rinse rice under water.
- 2. Combine with chicken broth and lemon juice in a medium pot.
- 3. Bring to a boil, then reduce heat to lowest setting. Let simmer for about 20 minutes or until all the liquid is absorbed. Add water if needed.
- 1. Melt the butter in a saucepan over medium-low heat.
- 2. Add the flour and whisk into the butter, breaking up any clumps.
- 3. Add the chicken stock, whisking. Bring to a boil, then simmer about 10 minutes.
- 4. Add the milk, nutmeg, cayenne, 2 tablespoons of the lemon juice, and salt to taste. Bring to a boil and simmer an additional 5 minutes.
- When finished, slice the chicken and place on top of a bed of rice. Pour on the sauce!
