Teriyaki Chicken With Soba Noodles
- 1 1/2 pounds chicken thighs
- 1/2 cup teriyaki marinade
- 1 tablespoon peanut oil
- 9 1/2 ounces soba noodles
- 3 1/2 ounces snow peas thinly sliced
- 1 orange segmented
- 2 spring onions thinly sliced, plus extra to serve
- 1 teaspoon fresh ginger grated
- toasted sesame seeds to serve
- In a medium bowl, combine chicken and 1/3 cup marinade. Cover and chill for 2 hours, or overnight.
- Heat peanut oil in a large frying pan over medium heat. Cook chicken for 3-4 mins per side, or until cooked through. Let rest for 5 mins then slice thickly.
- Meanwhile, cook noodles in boiling salted water according to package instructions. Drain. Toss with snow peas, orange segments, onions, ginger and remaining marinade.
- Serve chicken on a bed of noodles, sprinkled with extra onion and sesame seeds.
