Pickled Onions With Honey Sauce And Black Sesame Seeds
- 2 cups pickled onions or cocktail onions
- 2 cups cauliflower florets blanched, see note
- 1 cup broccoli florets blanched, see note
- 1 cup chopped cilantro finely
- 1 cup finely chopped onion
- 7 tablespoons olive oil
- 1/2 cup vinegar
- 1/2 cup honey
- 1 salt
- 1 teaspoon dijon mustard prepared
- 1 tablespoon black sesame seeds
- SALAD: Drain pickled or cock-tail onions and place in large owl with chopped cauliflower, broccoli, cilantro and chopped onion. Set aside.
- SAUCE: Blend all sauce ingredients, except sesame seeds, in a blender until fairly thick. Pour over salad and sprinkle with sesame seeds.
- Note: To blanch or parboil raw vegetables, bring a large pot of salted water to a boil. Add vegetables in small batches, cooking only for a minute or two, depending on the vegetable. Scoop vegetables out of pot with a slotted spoon and put into a colander. Run vegetables under cold water or dip briefly into an ice-water bath to stop cooking and keep them crisp and colorful.
