Hawaiian Meatloaf
- 1/2 cup milk
- 1 envelope brown gravy mix
- 1 teaspoon minced onion
- 2 beaten eggs slightly
- 1 tablespoon parsley
- 2 teaspoons soy sauce
- 1/2 teaspoon salt
- 1 cup oatmeal
- 2 pounds ground beef
- 1 pound pineapple crushed
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1 cup water
- 1 tablespoon vinegar
- 1 tablespoon soy sauce
- Blend milk, gravy mix and onion, let stand. Add eggs, parsley, soy sauce, and salt. Stir in oatmeal and ground beef. Mix well. shape into loaf. Bake in shallow pan at 350 degrees for 50 minutes. Top with 1/2 recipe Sweet and Sour Sauce during last 15 minutes.
- Mix sugar and cornstarch, stir in syrup from pineapple, water, vinegar and soy sauce. Cook over medium heat on top of stove until thickened. Add pineapple and cook until heated. Pour half over meatloaf while cooking. Pour the rest on before serving.
