Veggie Pasta With Gremolata Sauce
- 1/4 cup fresh lemon juice basically the juice of one lemon
- fresh basil A handful of finely chopped
- 2 teaspoons olive oil
- 2 cloves minced garlic fresh
- 2 teaspoons lemon zest fresh, I probably used a little more
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- rotini pasta Cooked
- 2 cups sugar snap peas fresh
- 2 cups broccoli florets fresh
- 1 pint grape tomatoes halved
- 2 tablespoons butter
- grated Parmesan cheese Freshly
- Whisk first 7 ingredients together for sauce.
- Cook pasta as directed.
- Add peas and broccoli for last 3 minutes of boil time.
- Drain and return to pan.
- Stir butter into pasta and veggies.
- Add tomatoes and Parmesan.
- Pour Gremolata sauce over pasta and serve.
