Parmesan Chicken With Pesto Noodles
- 4 chicken breasts
- ground black pepper
- 1 egg white lightly beaten
- 1 cup Parmesan cheese finely grated
- 400 grams tagliatelle
- 4 tablespoons basil pesto
- Preheat the oven on the grill setting. Place a chicken breast on a board, place one hand on top and, using a sharp knife, cut through it horizontally so you have two thinner halves. Repeat with the remaining breasts.
- Place chicken breast halves on the board, cover with cling film and tap gently with a rolling pin until flattened out evenly.
- Dip one side of each chicken half into the beaten egg white, then press into finely grated Parmesan and season well.
- Grill for seven minutes or until cooked through and golden.
- Cook the pasta in rapidly boiling water for eight minutes, drain and toss with pesto. Serve immediately with the chicken.
