Baked Chili
- 1 inch beef
- 5 pounds buffalo
- 1 green bell pepper diced
- 1 red bell pepper diced
- 3 spanish onions coarsely chopped
- 3 tablespoons fresh cilantro minced
- 6 chipotle peppers minced
- 6 hot chile peppers *, seeded & chopped
- 56 ounces diced tomatoes drained
- 8 garlic crushed or minced
- 15 ounces tomato sauce
- 1 can beef broth
- 2 tablespoons worcestershire sauce
- 8 tablespoons chili powder or to taste
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 tablespoon sugar
- 2 tablespoons ground cumin
- 1 teaspoon marjoram leaves dried
- 1 tablespoon oregano leaves dried Mexican
- 2 tablespoons masa harina
- 3 tablespoons thickener tapioca
- Preheat oven to 250 F. Place beef, peppers and other vegetables in large Dutch oven or enameled roasting pan, and mix together (do not brown meat).
- Thoroughly blend seasoning mix ingredients together in a bowl (mixer or blender recommended). Pour Seasoning Mix over ingredients in Dutch oven/roasting pan and mix well. Cover and place pan in oven. Cook for 5 to 6 hours or until beef is tender and sauce has thickened.
