Pork And Pear Tortilla Wraps
- 12 ounces ground pork
- 1 red onion finely chopped
- 1/2 cup fresh breadcrumbs
- 1 egg lightly beaten
- 2 teaspoons dijon mustard
- 1 teaspoon dried thyme
- 1 tablespoon olive oil
- 2 pears firm, cored, sliced
- 8 tortillas wholewheat
- 1 bibb lettuce or Boston
- 1/4 cup tomato chutney
- In a large bowl, combine pork, onion, breadcrumbs, egg, mustard and thyme. Mix well. Season to taste. Form into 8 evenly-sized football-shaped balls.
- In a large frying pan, heat oil on medium. Cook meatballs in two batches, for 8-10 minutes each, turning, until cooked through. Drain on paper towel.
- Meanwhile, heat a griddle pan on high. Brush with oil. Cook pear slices for 1-2 minutes each side, until lightly charred.
- Top each tortilla with lettuce, pear, meatball, and chutney. Wrap and serve.
