Burgers With French Fries And Coleslaw
- 1 3/4 pounds white cabbage cut into strips
- 7 ounces carrots peeled and cut into strips
- 4 tablespoons mayonnaise
- 2 tablespoons vinegar
- 4 1/4 cups vegetable oil for frying
- 1 3/4 pounds potatoes floury, peeled, cut into strips and patted dry
- 1 pound ground beef
- 2 onions peeled, 1 diced, 1 cut into thin rings
- 2 teaspoons wholegrain mustard
- 1 teaspoon tomato puree
- 1 egg
- 4 tablespoons breadcrumbs
- 4 tablespoons milk
- 2 tablespoons sunflower oil
- paprika for sprinkling
- In a bowl, mix the cabbage, carrots, mayonnaise and vinegar. Season to taste and chill.
- In a saucepan or deep fryer, heat the vegetable oil to 300u0b0F. Fry the potatoes in batches for 5 mins each, until golden. Drain on paper towels.
- In a bowl, mix the beef, diced onion, mustard, tomato puree, egg, breadcrumbs and milk. Season to taste and knead. Form into 4 burgers.
- Heat the sunflower oil in a frying pan and cook the burgers for 8 mins, turning. Remove from the pan and keep warm. Add the onion rings to the pan and saute until golden brown. Remove and drain on paper towels.
- Heat the vegetable oil to 325u0b0F and fry the French fries again in batches. Drain on paper towels. Sprinkle with salt and paprika. Serve with the burgers, onions and coleslaw.
