Beef Chili Without Beans
- 1 Tbsp. whole cumin seed
- 1/4 lb. bacon, diced
- 2 lb. beef chuck roast, diced into 1/8 and 1/4-inch pieces
- 4 large yellow onions, chopped
- 8 cloves garlic, crushed
- 8 to 10 fresh jalapeno peppers, seeded and chopped
- 2 tsp. salt
- 4 Tbsp. chili powder
- 1 Tbsp. oregano leaves
- 1 (28 oz.) can tomatoes
- Place cumin seed in a pie pan and toast in a 375u0b0 oven for 10 minutes.
- Remove and set aside.
- Heat a 6-quart kettle and saute the bacon until clear.
- Add the diced meat and brown over high heat along with the onions, garlic and jalapenos.
- When the meat is brown and the onion clear, add the remaining ingredients. Crush the tomatoes and add along with the juice.
- Simmer for 1 hour and add any additional seasoning.
