Chicken Wing And Leek Soup

  1. Heat oil in a large saucepan on high. Saute leeks, carrots, celery, potatoes and garlic for 3-4 mins, until tender.
  2. Stir in stock and bring to a boil. Add chicken and reduce heat to low. Simmer, covered, for 30 mins. Add pasta and simmer for 12-15 mins, until pasta is tender.
  3. Stir in corn and season to taste. Simmer for 2-3 mins. Serve sprinkled with parsley.
