Chicken Wing And Leek Soup
- 2 tablespoons olive oil
- 2 leeks sliced
- 2 carrots chopped
- 2 sticks celery sliced
- 2 potatoes peeled, chopped
- 2 cloves garlic crushed
- 2 quarts chicken stock
- 2 pounds chicken wings tips removed, halved through the joint
- 2 ounces small shell pasta
- 12 ounces sweet corn canned
- 2 tablespoons chopped parsley fresh, for garnish
- Heat oil in a large saucepan on high. Saute leeks, carrots, celery, potatoes and garlic for 3-4 mins, until tender.
- Stir in stock and bring to a boil. Add chicken and reduce heat to low. Simmer, covered, for 30 mins. Add pasta and simmer for 12-15 mins, until pasta is tender.
- Stir in corn and season to taste. Simmer for 2-3 mins. Serve sprinkled with parsley.
