Chicken Curry Filipino Style
- 1 kilogram chicken approximately 12 pieces
- 3 cloves garlic minced
- 1 onion medium, minced
- 1 inch ginger sliced
- 2 teaspoons iodized salt
- 1 1/2 cups water
- 2 tablespoons curry powder
- 2 inches medium potatoes cut into 1 cubes
- 2 eggplant sliced
- 1 inch string beans small bundle, cut into 2 long
- 1/4 kilogram coconut milk
- In a cooking pan saute garlic, onion and ginger. then add chicken and cooked for 3 minutes or until the meat is light brown in color.
- Add salt then stir until it is completely dissolved.
- Pour in water and curry powder. cover and bring to boil until chicken is completely cooked.
- Then add the potatoes, simmer again until potato is tender then add the remaining vegetables.
- Lastly, add the coconut milk, simmer for another two minutes.
