California Pulled Pork Hash
- 2 fluidounces bacon fat
- 1 sweet onion medium, 1/2" dice
- 8 Padron peppers large, seeded, stemmed, split lenghtwise
- 3 cups yukon gold potatoes skin on, blanched & cooled,1/2" rough dice
- 1 cup napa cabbage julienne
- 1/2 cup grape tomatoes roasted, cut in half
- 3 tablespoons garlic chives fine chop
- 4 cups pulled pork smoked, pulled into large coarse pieces, see link on step 3
- kosher salt As needed
- black pepper As needed, fresh groud
- 4 eggs as needed
- 1. In large saute pan or rondeau, on medium high heat, add bacon fat
- 2. Add onions, pardon peppers and potatoes cook until edges begin to brown and heat through
- 3. Add cabbage, tomatoes, chive and pulled pork and continue to saute until cabbage is just wilting
- 4. Season to taste as needed with kosher salt and fresh ground black pepper
- 5. Top with soft cooked or fried eggs.
- 1. Place equal portions into 3-4 casserole dishes and place in oven to brown
- 2. If desired, place sunnyside egg on top center of each hash dish
- 3. Season eggs with kosher salt and fresh ground black pepper
