Spinach Alexander
- 2 (10 oz.) pkg. chopped spinach
- 1/2 c. spinach, liquid
- 5 Tbsp. butter
- 2 1/2 Tbsp. flour
- 1/2 c. finely chopped onion
- 1/2 c. evaporated milk
- 1 tsp. black pepper
- 8 oz. jalapeno cheese, cut into small cubes
- 1 tsp. Worcestershire sauce
- 1 tsp. red pepper
- 4 drops Tabasco sauce
- buttered bread crumbs (optional)
- Cook spinach according to package directions.
- Drain and reserve liquid.
- Melt butter in saucepan over low heat.
- Add flour, stirring, until well blended and smooth.
- Do not brown. Add reserved spinach liquid, stirring constantly.
- Cook until smooth and thick.
- Add remaining ingredients, except bread crumbs. Stir until cheese melts.
- Combine with cooked spinach.
- Serve immediately or put into a casserole dish and top with bread crumbs.
- Spicy!!
