Creamy Cheesecake
- 1 cup graham cracker crumbs
- 1 cup sugar
- 1 cup margarine melted
- 1 envelope unflavored gelatin
- 1 cup cold water
- 1 cup lemon juice
- 8 ounces cream cheese softened
- 1 cup sugar
- 1 cup milk
- 1 cup whipping cream whipped
- strawberry Halves
- Combine crumbs, 1/2 cup sugar, and margarine; press into bottom of a 9-inch springform pan.
- Soften gelatin in combined water and lemon juice; stir over low heat until dissolved. Combine cream cheese, 1/4 cup sugar, and milk, mixing at medium speed on electric mixer until well blended. Stir in gelatin mixture. Chill until slightly thickened; fold in whipped cream. Pour into crust; chill until firm. Top with strawberries before serving.
